Fruit mix:
6 apples (any apple is fine), I love using red delicious, leave Skin on and chop into similar sized cubes
1 cup frozen blueberries
1/4 cup organic maple syrup
The juice of 1 orange
2 tsp ground cinnamon
Topping:
1.5 cups gf rolled oats
1/2 cup coconut flakes
2 tsp ground cinnamon
3 tbs extra virgin olive oil
1/4 cup LSA (ground linseed, sunflower seed and almonds)
2 tbs pepitas
Method
- Pre-heat oven to 160 degrees fan forced
- Mix all the fruit mix ingredients together well and place in a small baking dish
- Mix all the topping mix well, then place on top of the fruit mix and spread evenly
- Place in oven and bake for 40 mins, until golden brown on top and bubbling around the edges - if not cooked, put it back for another 10 mins until golden and bubbling
- Remove from the oven and enjoy!
